Quick Chicken A La King

2 tablespoons butter
1/4 cup all-purpose flour
1 teaspoon salt and pepper to taste
1 cup skim milk -- up to 1 1/2 cups
1/2 cup chicken broth
4 ounces mushroom stems and pieces
1 clove garlic -- minced
2 cups cooked chicken -- cut into chunks
1/4 cup chopped red bell pepper
2 tablespoons dry sherry
4 crusts pre-baked pastry shells
1 tablespoons fresh chopped parsley for garnish

Preparation / Directions:

In a medium saucepan, melt butter. Whisk in flour, salt and pepper to taste. Add milk and chicken broth. Stir and cook until thickened and bubbly. Add mushrooms and garlic. Stir in chicken, red pepper and dry sherry. Heat through. Spoon into pre-cooked shells. Serve warm, garnished with fresh parsley. Approximately 7 minutes.
