MORROCCAN CHICKEN TAJINE

Ingredients:

8 medium skinless chicken thighs
1/4 cup honey
1 large onion - chopped
3 cloves garlic - chopped
2 sticks cinnamon - 3 inches each
1 medium lemon - juiced
2 Teaspoon turmeric
1/2 cup dried apricots - quartered
 

Preparation / Directions:

Arrange chicken thighs in the bottom of a Dutch oven. Pour honey over chicken; sprinkle with onion and then with minced garlic. Add cinnamon sticks and sprinkle with lemon juice and turmeric. Top with apricot quarters and bake at 350 F for about 2 hours or until a fork can be inserted in chicken with ease. Remove cinnamon sticks from chicken mixture and serve with hot steamed rice or couscous.
