MARYLAND FRIED CHICKEN

Ingredients:


1/2 cup All-purpose flour

1 teaspoon Paprika

1/2 teaspoon Salt

1/4 teaspoon Pepper

2 large eggs

2 tablespoons Water

2 cups Cracker crumbs or dry

1 cup Bread crumbs or Cornmeal

1/4 teaspoon Salt

3 1/2 pound broiler-fryer Chicken cut up

1 Cup Vegetable oil
 

Preparation / Directions:


Mix flour, paprika, salt and pepper. Coat chicken with flour mixture. Beat eggs and water. Mix crumbs or cornmeal with salt. Dip chicken into egg mixture. Coat with cracker crumb mixture. Heat oil (1/4 inch) in 12-inch skillet over medium-high heat. Cook chicken in oil about 10 minutes or until light brown on all sides; reduce heat. Cover tightly and simmer about 35 minutes, turning once or twice, until juice runs clear. If skillet cannot be covered tightly, add 1 to 2 tablespoons water. Remove cover during last 5 minutes of cooking to crisp chicken.
