4 pieces chicken breast
1/2 cup mango chutney
1 cup breadcrumbs
3/4 teaspoon red pepper flakes
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup spiced rum
1/2 cup unsalted butter

Preparation / Directions:

remove skin and bones from breasts split in half and place between sheets of plastic wrap pound to flatten slightly place 1 tablespoon chutney onto each breast fold over filling and secure with a wooden pick combine breadcrumbs, red pepper flakes, salt, and black pepper-mix well moisten chicken with rum coat evenly with breadcrumb mixture place onto a piece of waxed paper and chill for 10-15 minutes heat butter in a large skillet, over a moderate flame add chicken and brown well on all sides remove to a hotel pan top with remaining rum and breadcrumbs cover with foil bake @ 350 degrees for 20 minutes remove to a heated serving platter serve hot
