3/4 cup fresh lemon juice
1 tablespoon lemon zest
3/4 cup fresh lime juice
1 tablespoon lime zest
1 tablespoon sugar
1 teaspoon garlic
1/4 teaspoon cayenne
1/4 cup peanut oil
8 medium chicken leg quarter

Preparation / Directions:

combine lemon juice, lemon zest, lime juice, lime zest, sugar, garlic, and cayenne in a saucepan, over a medium flame heat and stir for 4-5 minutes, until sugar has dissolved completely season to taste with salt and white pepper remove from heat, whisk in oil, and set aside to cool pierce chicken pieces all over with a fork or skewer arrange in a single layer in a hotel pan pour marinade over the chicken cover and chill for 1-4 hours, turning once or twice drain chicken, reserving marinade grill over hot coals for 20 minutes, turning and basting often grill for another 20 minutes, without basting, until glazed and cooked through serve hot, warm, or at room temperature
