Chinese Style Goulash |

Ingredients:
2 Tablespoons margarine |
1 Small onion -- sliced |
1 Can sliced mushrooms -- drained |
2 Cups chicken broth |
1 Cup rice -- uncooked |
2 Cups cooked chicken -- cubed |
1 Medium green pepper -- cut into strips |
1/2 Cup celery -- diced |
1/4 Cup Light Cream Or Dairy Free Substitute |
1 Dash salt and pepper |

Preparation / Directions:
Melt margarine in large skillet. Cook and stir onion and mushrooms in margarine until onion is tender. Add chicken broth; heat to boiling. Stir in rice. Reduce heat; cover and simmer 10 minutes. Stir in remaining ingredients. Cover; cook 10 to 15 minutes.
