Chimichangas

Ingredients:

14 ounces diced green chiles
1 cup onion
2 tablespoons unsalted butter
2 cups cooked chicken
1/2 cup sour cream
1/2 cup sharp cheddar cheese
1/4 cup black olive
4 whole flour tortilla
1 tablespoons corn oil
 

Preparation / Directions:

Heat butter in a skillet, over a moderate flame add onions, heat and stir for 5 minutes add chicken, sour cream, grated cheddar, and olives-mix well remove from heat divide mixture evenly between tortillas fold one edge over filling fold in sides and rollup to remaining edge secure with toothpicks heat oil to 370 degrees add chimichangas to hot oil and fry until well browned on all sides drain on paper towels serve hot
