Easy Chicken Pot Pie

2 crusts frozen pie crusts
1 1/2 cups frozen mixed vegetables
1 cup cubed potatoes
2 cups diced raw chicken
1 package pioneer country white gravy mix
1/4 medium Onion -- diced, or you can -- use green onions

Preparation / Directions:

* can substitute cooked Turkey for chicken Spray skillet with non-stick spray, cook chicken and onions till chicken is tender and done. Rinse and drain mixed vegetables on paper towel. Cook potatoes just until fork can pierce them (they will finish cooking in oven). Do not over cook or they will be mush. Mix gravy as directed on package. Mix chicken, gravy, vegetables, potatoes. Pour into one of the pie shells. Use 2nd pie shell for top crust. Crimp edges and bake in 350~ oven on cookie sheet until crust is brown. To prevent edged from over cooking, place strip of foil around edge of pie after the edge has browned. Let cool and place in gallon freezer bag. To store in freezer, I set pie in box close to the same size as pie, so I can stack on top shelf of my freezer.
