Creamed Chicken In Eclairs

1 cup boiling water
1/2 cup butter
1/4 teaspoon salt
---creamed chicken---
1 1/2 cups cooked chicken or turkey white meat
3/4 cup toasted almonds
2 medium pimientos -- finely chopped
1 can mushroom soup
2 tablespoons butter
3 tablespoons flour

Preparation / Directions:

ECLAIRS Put above ingredients in saucepan, cover and bring to a boil; add 1c. flour, all at once, stirring vigorously. Cook and stir until dough is transparent and forms a ball that clings to the spoon.(about 5 min) Cool until lukewarm; add 4 eggs, one at a time, beating until smooth after each one. Drop onto lightly greased baking sheet by the tablespoon; shape into 12 mounds 1/2" thick. Bake in 400 degree oven for 45 min. or until eclairs are free from beads of moisture and firm. Cut a diamond shaped piece from each eclair and fill with creamed chicken. CREAMED CHICKEN Melt butter in saucepan, add flour and cook until bubbling; add mushroom soup, stirring constantly until thick. Add the chicken or turkey, almonds, pimento, and some broth of too thick. To toast almonds, put in pie tin in 450 degree oven for a pew minutes turning often.
