Chicken And Barley Soup

1 Large stewing hen
4 medium carrots -- grated
3 medium Onions -- chopped
2 medium parsnips -- diced
4 Tablespoons butter
2 Quarts water
1 cup pearl barley
2 Teaspoons salt
1/2 Teaspoon pepper
2 Tablespoons chopped parsley

Preparation / Directions:

Cook the carrots, onions and parsnips in the butter for 15 minutes. Add the water and bring to a boil and stir in the barley, salt and pepper. add the cut up chicken. cover and Cook over low heat 1 1/2 hours., or till done Sprinkle with the parsley.
