Chicken and Potato Skillet

Ingredients:

1 cup onions -- diced
1 cup mushrooms -- fresh sliced
1 clove garlic -- minced
1 spray i cant believe its not butter spray
1 medium boneless skinless chicken breast halves -- grilled, or broiled
1 can potatoes -- canned, sliced
1 teaspoon oregano -- to taste
1 teaspoon fresh ground black pepper -- to taste
 

Preparation / Directions:

Spray a 10-inch nonstick skillet with the butter spray. Add in onions and garlic and saute for 1-2 minutes. Add mushrooms and continue to saute until mushrooms soften. Chop the grilled chicken breast into bite-size pieces and add to the skillet. Let cook for 2 minutes. Add in the sliced potatoes and spray top with more of the butter spray then stir. Add oregano and black pepper and let cook until potatoes are browned and warmed through. Serve with salad or vegetables. This recipe makes a large volume of food. It could be divided to 2 people with additional veggies and salad served to complete the meal.
