Cashew Chicken

2 tablespoons peanut oil
1/2 teaspoon salt
1 cup boneless chicken
3/4 cup snow peas
1/2 cup sliced bamboo shoots
1/2 cup mushroom
1 cup chicken stock
1/2 cup cashews
1/4 teaspoon sugar
1/2 teaspoon cornstarch
1 teaspoon water

Preparation / Directions:

heat oil to 375 degrees, over a moderate flame add salt, stir add chicken, heat and stir for 2 minutes add snow peas, bamboo shoots, mushrooms, and broth cover and simmer for 2 minutes stir in cashews and sugar combine cornstarch and water-mix well add to chicken mixture heat and stir until thickened serve hot, with rice
