4 tortillas flour tortillas
1 bunch spinach
1/2 pound roast chicken from deli -- sliced
1 medium Vidalia onion -- thinly sliced
1 bottle Thousand Island Dressing
1 teaspoon salt and pepper, to taste

Preparation / Directions:

Wash spinach and pat dry. Soften tortillas in microwave and spread with Thousand Island dressing. Arrange spinach on top and then chicken slices. Season with salt and pepper, and arrange paper thin slices of Vidalia onions on top. Roll tightly and serve.
