Mustard Chicken

3 pounds chicken pieces
2 tablespoons butter melted
4 tablespoons dijon mustard
3 cloves garlic minced
1 teaspoon thyme
1/2 teaspoon sage
1/2 teaspoon cinnamon
2 teaspoons paprika
1/4 teaspoon pepper
1/2 cup pork rinds crushed
2 tablespoons parmesan grated
1 tablespoons soy flour
2 tablespoons butter

Preparation / Directions:

Preheat oven 350. Melt 1 T butter and mix with mustard, garlic and all spices. May need to add a little more melted butter. Mix crushed pork rinds, parmesan and soy flour and place in shallow dish. Coat chicken well with mustard mixture, then roll in rind mixture. Place in shallow baking dish, dot with butter, and bake covered about 45 minutes, then uncover and bake additional 15-20 minutes.

I used 3 boneless breasts and halved all other ingredients. Only needed to cook 45 minutes. This was really tasty and the chicken was moist.
