4 layer Strawberry Cheesecake

14 ounces bag oatmeal cookies
24 ounces cream cheese
1 can condense milk
3 large eggs
1 can strawberry pie filling
1 teaspoon vanilla
1 jar strawberry preserves
1 stick butter
1/2 Cup vegetable oil
1 package strawberry
1 package cake mix

Preparation / Directions:

In a food processor, finely crush cookies set aside. Melt butter. In a bowl add cake mix and oil mix well and set aside. Spray a 10in. springform pan with pam. mix cookies and melted butter you dont want it to wet. form the crust going up the sides. add the cake mix batter on top and bake at 325^ for 25-30 minutes. while that is baking make filling. add softened cream cheese and beat untill smooth add condense milk continue beating add eggs one at a time until well mixed. stir in strawberry pie filling. pour into prepared crust and set in a water bath*. Lower temperature to 300^ and bake for an additional 3-4 hours. The cheese cake when done should be a golden brown color and still slightly shake in the middle. Let cool in pan on a baking rack for 10 minutes. Loosen the ring and refrigerate on the baking rack overnite. Take a wide spatula and gently transfer cooled cake on a serving dish. Spread strawberry preseves on top. * This is called a bain marie. Place cheese cake in a pan and fill half way up with hot water. This method keeps the cake from cracking and moist.
