Strawberry-Amaretto Cheesecake

1/4 cup amaretti cookie crumbs --about 28 small cookies
24 ounces cottage cheese, 1% fat
16 ounces light cream cheese
1 cup sugar -- divided
2 tablespoons amaretto
2 large eggs
4 large egg whites -- room temperature
1/8 teaspoon cream of tartar
2 3/4 cups fresh strawberries -- halved
1 tablespoon sugar

Preparation / Directions:

Preheat oven to 325 degrees. Coat the bottom of a 10-inch springform pan with cooking spray; sprinkle with cookie crumbs and set aside. Position knife blade in food processor bowl; add cottage cheese and cream cheese. Process until smooth. Add 3/4 cup sugar, amaretto and whole eggs; process just until smooth. Pour into a large bowl; set aside. Beat egg whites and cream of tartar at high speed until foamy. Gradually add remaining 1/4 cup sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently stir 1/4 of egg whites into cheese mixture; gently fold in remaining egg whites. Pour batter into prepared pan and bake for 50 minutes. Remove from oven; cool for 15 minutes. Cover and chill for at least 8 hours. Combine 3/4 cup strawberries and 1 tablespoon sugar in a blender container; cover and process until smooth. Arrange remaining 2 cups strawberries on top of cheesecake. Drizzle with strawberry glaze.
