1 package knox unflavored gelatine
1/2 cup sugar
1 cup boiling water
2 packages cream cheese -- 8oz, softened
1 teaspoon vanilla extract -- optional
9 ounces prepared graham cracker crust -- extra serving size

Preparation / Directions:

In large bowl, mix unflavored gelatine with sugar, add boiling water and stir until gelatine is completely dissolved, about 5 minutes. With electric mixer, beat in cream cheese and vanilla until smooth. Pour into prepared crust; chill until firm, about 3 hours. Garnish, if desired, with fresh or canned fruit.
