1 crust pre-made graham cracker crust -- (9-inch)
15 ounces ricotta cheese
8 ounces cream cheese
4 large eggs -- lightly beaten
1/2 cup sugar
1/3 cup amaretto -- (di saronno preferable)
1 teaspoon vanilla
1/4 teaspoon salt

Preparation / Directions:

Pre-heat oven to 325 degrees. Beat together ricota and cream cheese until smooth. Add remaining ingredients; beat until smooth. Pour into pan. Bake 1 hour and 15 minutes or until firm in middle. Cool 20-30 minutes in pan before removing. Cool completely before serving. Make one 9-inch cheesecake.
