Spinach Casserole

1 package jiffy corn muffin mix
1 package frozen chopped spinach
2 cups chopped onion
1 tablespoon butter
2 large beaten eggs
1 cup sour cream
1 package swiss cheese -- optional
1/4 cup butter
1/4 cup flour
3/4 cup milk

Preparation / Directions:

Preheat oven to 350 degrees. Grease 1 1/2 quart casserole. Melt butter in saucpan over low heat. Blend in flour. Cook, stirring constantly, until mixture is smooth. Remove from heat, add milk gradually. Heat to boiling, stirring constantly. Boil 1 minute. Set aside. Cook and drain spinach. Set aside. Saute onion in 1 tablespoon butter. Mix spinach with onion. Set aside. Combine eggs, sour cream and corn muffin mix. Blend well. Add spinach mixture and cream sauce. Pour into casserole and bake for 45 minutes. Sprinkle swiss cheese on top. Return to oven until cheese is melted.
