Corn Bread Casserole - New Soul Food

Ingredients:


1 cup yellow cornmeal

1/2 teaspoon baking soda

1/4 teaspoon salt

8 ounces plain fat-free yogurt

1 can creamed corn -- (8-oz)

1/4 cup evaporated fat-free -- (skim) milk
 

Preparation / Directions:


Heat the oven to 350 degrees. In a large bowl, combine the dry ingredients. Add the remaining ingredients and stir just until moistened (do not overbeat). Pour the batter into 6 individual souffle cups and bake for 30 minutes or until a knife inserted in the cups comes out clean. Serve hot. 6 servings/Serving size: 1/2 cup
