BEAN CASSEROLE

Ingredients:


1 pound baby lima beans

1/2 pound raw bacon -- cut into 1 inch pieces

1 small green pepper -- chopped

1 medium onion -- diced

2 cups home canned tomatoes or 1 can tomato soup

2 teaspoons dry mustard

1 cup brown sugar
 

Preparation / Directions:


Preheat oven to 350 F. Soak lima beans overnight. Drain, add fresh water to cover, and cook until tender. In a 2 quart casserole dish combine beans, bacon, chopped pepper, diced onion, tomatoes, dry mustard, and brown sugar. Bake for 1 hour and 15 minutes. Servings: 6
