Carrots With Coriander

Ingredients:


1 pound carrots -- sliced

1 teaspoon vegetable oil

1 teaspoon round coriander

1/2 cup lemon -- juice of

1/4 cup water

1 bunch chopped fresh cilantro -- or parsley -- as garnish
 

Preparation / Directions:


Saute carrots in oil in nonstick pan until golden. Add coriander, lemon juice, and water. Bring to a boil and simmer until carrots are tender-crisp. Watch this carefully; carrots burn easily if the heat is too high. Garnish. 4 servings/Serving size:
