Simple Saltwater Taffy

1 cup sugar
2 tablespoons cornstarch
3/4 cup light corn syrup
1/2 cup water
1/2 teaspoon kosher salt
2 tablespoons unsalted butter
2 teaspoons vanilla

Preparation / Directions:

Combine sugar and cornstarch in a saucepan-mix well stir in corn syrup, water, and salt add butter and place over a medium flame heat and stir until mixture boils and sugar has completely dissolved heat, without stirring, until mixture reaches 260 degrees (soft ball) remove from heat, stir in vanilla or other flavoring allow to cool to the touch gather up a handful and pull apart fold in half and pull again continue pulling and folding until the mixture takes on a definite satin sheen pull into a 3/4-inch diameter rope cut into 1-inch pieces with buttered scissors wrap in waxed paper serve at room temperature
