Preparation / Directions:
Combine sugar and soda in deep pan. Mix with wooden spoon. Add cream. Stir carefully to dissolve all crystals before boiling. Bring to boil. Reduce heat to keep from boiling over. Cook to soft ball stage. Remove from heat. Add butter. Measure exactly. Too much may keep candy from hardening. Add pecans and beat until thick enough to drop from spoon. Candy thickens rapidly in two to 3 minutes. Drop on waxed paper. Makes 2 to 2 1/2 dozen, 1 1/2 inch patties. If necessary, add 1 tablespoon hot water to keep candy at right stage.
