Here are a few tricks that my help save some eggs or patience!! For best results, use EXTRA LARGE EGGS. Don't put off making the divinity until the last minutes, because if it is damp or rainy, the divinity may have trouble developing. Use only metal or glass bowls. Plastic will not whip the egg whites to greatest volume, and may cause thin divinity. Make sure all utensils are free of grease. Be certain that NO egg yolk remains with egg white. The yolk contains fat, which will reduce volume of egg white. Put lid on pan to begin cooking process of sugar, corn syrup, add water mixture. When boiling begins, dispense with the lid. This reduced chances of finished product having sugar crystals. Use a standard mixer. Portables do not have enough power for this job. Add hot syrup to egg whites in a slow, steady stream while beating constantly. Adding syrup too fast causes the mixture to separate and will lengthen the amount of beating time. Beating time may be 10 to 15 minutes. Egg Whites MUST be at room temperature to assure greatest volume. If divinity becomes too stiff during beating, mix in a few drops of hot wate
