Preparation / Directions:
Combine sugar, syrup and water; let boil to hard ball stage (250 on candy thermometer). Pour about half, slowly, onto the beaten egg whites while continuing to beat. Put rest back on stove and boil up again to about 250. Then add rest of egg white mixture and continue beating until it begins to harden, lose gloss and hold shape. Add flavoring and chopped nuts; drop quickly on waxed paper as it sets up fast. (Use 2 spoons and keep pieces about size of walnut.) Makes about 2 pounds.
