Coconut Butterballs

Ingredients:

1 cup butter
1/4 cup confectioners sugar -- sifted
1 teaspoon vanilla
2 cups flour -- sifted
1 1/2 cups flaked coconut
1/4 cup confectioners sugar -- (to 1/2 cup), sifted
 

Preparation / Directions:

Cream butter until light and fluffy, gradually adding sugar, then vanilla. Blend in flour, then coconut. Mix well. Shape dough into 1 inch balls (walnut size), place on cookie sheet and refrigerate for 15 minutes. Bake at 350F for 15 minutes or until done. Roll cookies, while warm, in confectioner's suga
