Poppy Seed Cake

Ingredients:


1/2 Cup Sugar

1 Tablespoon Cinnamon

2 Ounces Poppy Seeds

1 Cup Plus

4 Tablespoons Buttermilk

1 Teaspoon Almond Extract

1 Cup Butter

1 1/2 Cups Less

3 Tablespoons Sugar

4 large eggs Yolks

4 large egg whites

2 1/2 Cups Flour

1 Teaspoon Less

1/4 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1/2 Teaspoon Salt
 

Preparation / Directions:


Mix together 1/2 cup sugar and cinnamon and set aside. Mix together and soak; poppy seeds, buttermilk and almond extract. Set aside. Cream butter and sugar, add egg yolks one at a time. Beat well. Add combined dry ingredients alternately with buttermilk mixture. Fold in stiffly (underbeat) beaten egg whites. Spoon 1/3 of thick batter into greased tube pan. Sprinkle in 1/3 of sugar mixture. Layer, ending with sugar. Bake at 350 for 60 minutes. Cook 3 days before serving.
