Passover Apple Cake

Ingredients:


3 large eggs

1 cup sugar

1 cup matzo cake meal

1 teaspoon potato starch

4 medium apples -- peeled and sliced

1/3 cup sugar

2 teaspoons cinnamon

1/2 cup oil
 

Preparation / Directions:


Toss apples with 1/3 cup sugar and cinnamon. Set aside. Beat eggs, sugar and oil. Blend in dry ings. Put 3/4 of the batter in a greased 9" square pan. Arrange apples over. Top with rema ining batter. Bake 50-60 min. at 350F.
