upside down pear-spiced cake

this recipe makes a 16 slice rich sponge cake with a caramel topping with glaze the sides of the cake. the cake has a rich dark brown colour and has a soft spongy texture on the inside.


3 medium pears
1/2 pound butter softened
2 cups granulated sugar
3 cups flour
3 teaspoon baking powder
1 cup milk
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1 teaspoon vanilla extract
2 tablespoons brown sugar
4 large eggs

Preparation / Directions:

wash pears and slice thinly andplace in water with afew drops of lime juice preheat oven to 350 cream butter and sugar until fluffy and pale and egss one at a time about a minute after each addition sift dry ingridents and seperate into 3 sections alternately add flour mixture and milk ending with flour grease and line a 9in pan srinkle with brown sugarand arrange pear slices at the base of the pan pour cake batter over pear slices and bake for 45 minutes or until skewer come out clean
