Boiled Fruit Cake

Ingredients:


1/4 pound butter or margarine

1 cup sugar

1 teaspoon Bicarbonate Soda

1 teaspoon Mixed Spice

1 cup water

1 pint Mixed Fruit

2 large eggs

1 cup plain flour

1 cup S.R. flour

1 teaspoon Rum or vanilla essence
 

Preparation / Directions:


Boil sugar, water, shorteninng, soda, spice and mixed fruit for 12 minutes. Allow to cool. Add eggs and flours and flavouring. Stir in well. Bake in a greased paper lined pan 8ins x 8ins x 3ins using a moderate oven (320 degrees F) or about 160 degrees C for about an hour
