Tomato Cake (A Spice Cake)

1 cup brown sugar
1/2 cup butter
2 large eggs
1/2 cup chopped nuts
1/2 cup chopped dates
1/2 cup raisins
2 cups peeled cubed tomatoes
3 cups sifted flour
2 teaspoons baking powder
1 teaspoon nutmeg
1/2 teaspoon salt

Preparation / Directions:

Preheat oven to 350F. Cream butter and sugar. Add eggs, nuts, dates, raisins and tomatoes. Sift dry ingredients into tomato mixture. Pour into greased and floured 9 x 13 inch pan. Bake 350F for 30 min. Frosting 8 ounces cream cheese 1 1/2 cup confectioner's sugar 3 tbs. butter 1 tsp. vanilla pinch salt Beat with electric mixer. Frost cooled cake. Enjoy your tomatoes!
