Supper Fish Cakes

Ingredients:

1 pound cooked fish -- white
6 medium potatoes -- boiled
1 medium Onion -- chopped
2 large eggs
1 teaspoon salt and pepper to taste
1 bunch parsley
2 tablespoons flour
 

Preparation / Directions:

1. Cook potatoes until they get sticky. Mash while hot and add fish. 2. Chop onion and add to fish and potatoes. Add salt, pepper, and parsley to taste. 3. Add egg and mix well. Make into patties, dust with flour and fry in hot grease until brown. Notes: Tried 11/23/98 - Easy to prepare. These were simple but good. I made a fake remoulade sauce of Cocktail sauce, mayo and horseradish to go with. Was liked by all, we had leftovers.
