Spiced Coffee Cake

1/4 cup vegetable shortening
1 cup sugar
2 large egg yolk
2 large egg white
1 cup flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup milk
1 cup powdered sugar
1 tablespoon ground cinnamon
1/4 cup unsalted butter

Preparation / Directions:

Combine shortening and sugar in a mixer bowl-mix well add yolks-mix well combine flour, baking powder, and salt add a small amount to mixing bowl-mix well add a small amount of milk-mix well continue alternating and mixing dry ingredients and milk-mixing well gently fold in egg whites line the bottom of a 9x13x2-inch pan with parchment paper butter and flour the sides pour batter into prepared pan combine powdered sugar, cinnamon, and butter-mix well crumble evenly over top of batter bake @ 375 degrees for 25-30 minutes remove from oven serve warm or at room temperature
