Pineapple Upside Down Cake

1 package jiffy yellow cake mix
1/2 package jiffy white frosting mix
1/4 cup butter
1 large egg
1 cup sliced or crushed pineapple -- drain and reserve juice
1/4 teaspoon maple flavoring
5 medium maraschino cherries -- halved

Preparation / Directions:

Preheat oven to 350 degrees. Melt butter in 8 x 8 inch square ckae pan (or 9 inch round cake pan). Set aside. Drain pineapple (reserve liquid for cake). Add enough water to juice to measure 1/2 cup. Beat cake mix, egg, water, and juice together for 4 minutes on medium speed. Mix white frosting and maple flavoring together with a fork until evenly distributed. Sprinkle frosting mixture over butter. Sprinkle pineapple over frosting. Place 10 maraschino cherry halves on pineapple. Pour batter over top. Bake for 40 to 50 minutes until done. Cool in pan 1 to 2 minutes. Invert onto serving plate. Cool or serve warm. Good topped with whipped topping. Makes 9 to 10 servings. (Fruit cocktail may be substituted for pineapple.)
