Pineapple Upside Down Cake

1 1/4 Cups sifted cake flour
1 3/4 Teaspoons baking powder
3/4 Teaspoon salt
3/4 Cup sugar
1/3 Cup shortening
1 large egg
1/2 Cup milk
1 Teaspoon vanilla

Preparation / Directions:

Sift together first 4 ingredients and add last 4 ingredients to sifted mixture. Beat 3 minutes at low to medium speed. Cover greased 9inch round cake pan with 1/4 cup firmly packed brown sugar and 2tablespoons melted butter. Arrange small can of crushed pineapple and marachino cherries in sugar. Pour batter over fruit and bake at 350 degrees for 3540 minutes.
