Peanut-Butter Mocha Whip

8 large ladyfingers -- split lengthwise
1 cup whipping cream
1 teaspoon instant espresso coffee
1/2 teaspoon vanilla extract
3/4 cup part-skim ricotta cheese
3 tablespoons sugar
2 tablespoons cocoa
2 tablespoons mini peanut-butter morsels
1 medium banana -- thinly sliced
1 package additional whipped cream

Preparation / Directions:

In dessert dishes, line with ladyfingers. Set aside. In food processor, combine cream, instant coffee, vanilla, ricotta cheese, sugar and cocoa. Blend until smooth. Stir in peanut butter morsels. On ladyfingers in dessert dishes, spoon over ricotta mixture. On ricotta mix, lay sliced banana, (just a few slices). Top bananas with additional whipped cream. Place in refrigerator or freezer to chill. Approximately 7 minutes
