Peanut Strawberry Shortcake

Ingredients:


1 pint fresh strawberries -- cleaned and sliced

1/2 cup sugar

1/2 cup peanuts -- coarsely chopped

1/4 cup margarine

4 large shortcake biscuits -- warmed and split

1 pint sweetened whipped cream -- (for garnish)

1/2 cup chopped peanuts -- (for garnish)
 

Preparation / Directions:


1. Combine strawberries and sugar; let set 1 hour, stirring once or twice. 2. Stir in 1/2 cup peanuts. 3. Lightly spread margarine on each biscuit half; spoon about 1/4 cup strawberry mixture onto bottom half of each biscuit. 4. Replace tops of biscuits; top each with about 1/4 cup strawberry mixture. 5. Garnish with whipped cream and chopped peanuts.
