2 1/4 Cups Softasilk Cake Flour
1 3/8 Teaspoons baking powder
1/4 Teaspoon baking soda
3/4 Teaspoon salt
3 large egg whites
1 1/4 Cups granulated sugar
1/3 Cup canola oil
1 large egg
1/3 Cup fatfree sour cream
1/3 Cup unsweetened applesauce
1 Tablespoon orange extract
2 Tablespoons packed grated orange peel
1/2 Cup orange juice
2 Tablespoons powdered sugar

Preparation / Directions:

Heat oven to 350 degrees. Grease and flour 12cup bundit cake pan. Mix cake flour, backing powder, baking soda and salt; set aside. Beat egg whites in large bowl with electric mixer on medium speen until foamy. Gradually add 1/4 cup of the granulated sugar, beating until whites are stif but not dry; set aside. Beat oil, remaining 1 cup granulated sugar, the whole egg, sour cream, applesauce, vanilla, orange extract, orange peel and orange juice in large bowl. Gradually beat in flour mixture. Fold in egg whites. Pour into pan. Bake 4045 minutes or until golden brown and springy to the touch. Cool 10 minutes; remove from pan to wire rck. Cool completely. Sprinkle with powdered sugar. Hight Altitude Directions....3,500 to 6,500 feet: Bake 43 to 47 minutes.
