Oatmeal Cake - Real Food

1 1/2 cups boiling water
1 cup quick oatmeal
1/2 cup butter or margarine
1 cup brown sugar
1 cup white sugar
2 large eggs
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup brown sugar
1/2 cup white sugar
1 cup coconut
1 cup nuts -- chopped (optional)
6 tablespoons butter or margarine
1/2 cup evaporated milk
1/2 teaspoon vanilla

Preparation / Directions:

Pour boiling water over oats, then mix well. Cream butter or margarine, sugars and eggs. Stir soaked oatmeal into butter mixture and mix well. Stir in dry ingredients, then pour into a 9 x 13 inch pan which has been prepared with non-stick cooking spray or has been greased and floured. Bake at 350 degrees F. for 30 - 35 minutes. Spread with the following topping: Topping: Combine first six ingredients. Heat until bubbly, then stir in vanilla. Spread on cake.
