Mom's Fluffy Banana Cake

1 cup mash bananas
2 cups sifted all purpose flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup soft shortening
1 1/2 cups sugar
2 large eggs -- unbeaten
1 teaspoon vanilla
2 1/2 tablespoons flour
1/2 cup milk
1/2 cup sugar
1/2 cup oleo
1 teaspoon vanilla

Preparation / Directions:

Beat with electric mixer on high speed for 1 1/2 minutes, scraping bowl while beating. Stop mixer, scrape beaters. Add 1/2 cup sour or buttermilk, alternately, with the flour mixture, beating at low speed only long enough to blend well, about 2 minutes. Pour into 2-9x9" square greased and floured pans, and bake 30-35 minutes. Also, can place in 9X12" instead, and bake until done. Cool and spread with "Non-Sweet Frosting", or serve warm with whipped or ice cream. Delicious any way! NON-SWEET FROSTING Cook flour and milk till thick. Cool thoroughly. Cream sugar, oleo and vanilla. Add to flour mixture and beat and beat and beat and beat till very smooth and creamy. Spread on cake.
