Mardi Gras Cake

Ingredients:


30 ounces canned fruit cocktail

1/2 cup margarine or butter

1 cup light brown sugar -- firmly packed

1 package lemon cake mix (18 1/2 ounces)

1 cup water

1 package ice cream -- (optional)
 

Preparation / Directions:


1. Drain fruit cocktail, reserving 1/3 cup syrup. 2. Melt margarine in 13 x 9-inch pan or 12-inch skillet; add sugar. 3. Arrange fruit in sugar mixture. 4. Prepare cake mix according to package directions, using 1 cup water and reserved syrup. Spread batter over fruit. 5. Bake in preheated 350 F. oven 45 to 50 minutes, or until cake tests done. 6. Cool 5 minutes; invert onto large serving dish. 7. Serve warm or cold with ice cream, if desired.
