2 1/4 cups flour
1 tablespoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cocoa powder
1/2 teaspoon salt
3 large eggs
3/4 cup brown sugar
1/4 cup vegetable oil
3/4 cup honey
3 tablespoons grated orange or lemon zest
3/4 cup strong brewed coffee -- cooled

Preparation / Directions:

Preheat oven to 350. Spray a 9 X 5 loaf pan with cooking spray. In a medium bowl, combine the flour, cinnamon, baking powder, baking soda, cocoa, and salt. In a separate bowl, beat together the eggs and brown sugar until smooth. Stir in the vegetable oil, honey and citrus zest until thoroughly incorporated into the egg mixture. Add 1 cup of the flour mixture to the egg mixture and beat to combine. Add coffee and fold in the remaining flour mixture until incorporated. Pour batter into the prepared loaf pan. Bake 1 hour, or until a pick inserted in the center comes out clean. Remove from oven and cool slightly. Remove from pan; slice.
