High Country Apple Cake

Ingredients:

1 3/4 cups sugar
3 large eggs
1 cup oil
2 cups flour
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking powder
1 tablespoon cinnamon
2 cups unpeeled -- cubed apples
1/2 cup pecans -- chopped, (optional)
 

Preparation / Directions:

Measure all ingredients, except apples and pecans, into large bowl. Beat together thoroughly with spoon. Fold in apples and pecans. Bake in greased and floured 9" x 13" pan at 350 degrees for 45 to 50 minutes. Cool and remove from pan.
