2 tablespoons shortening
2/3 cup dark brown sugar
1 large egg -- beaten
1/2 cup thick unsweetened applesauce
1 cup sperry pancake and waffle flour
1/2 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon mace

Preparation / Directions:

Cream shortening and sugar thoroughly. Add egg and applesauce beating until creamy. Sift flour, measure and sift again with spices. Add to creamed mixture. Pour into well greased muffin tins and bake in a moderately hot oven, 375, for 20 minutes. 16 medium cupcakes.
