Easter Basket Cupcakes

Ingredients:

1 package duncan hines yellow cake mix
3 tablespoons water plus 1 1/2 teaspoons
6 drops green food coloring
1 1/2 cups shredded coconut
1 package duncan hines vanilla frosting
1/2 pound assorted jelly beans
24 pieces assorted colors of pipe cleaners
 

Preparation / Directions:

1. Preheat oven to 350. Place 2 1/2 inch paper liners in 24 muffin cups. 2. Prepare, bake and cool cupcakes according to package directions. 3. Combine water and green food coloring in a large container with a tight fitting lid. Add coconut, shake until coconut is evenly colored green. 4. Frost cupcakes with vanilla frosting. Sprinkle coconut overfrosting. Press three jelly beans into coconut on each cupcake. Bend pipe cleaners to form handle and press into cupcake.
