Chocolate Roll Cake

5 large eggs -- separated
1 cup sugar
3 tablespoons water
6 ounces german sweet chocolate
1 cup whipping cream
2 tablespoons cocoa as needed

Preparation / Directions:

Separate eggs and beat yolks with 3/4 cup sugar. Melt chocolate with water. Cool slightly and mix into yolks. Beat whites with remaining 1/4 cup sugar and fold into the chocolate mixture. Butter a large jelly roll pan (11 x 17-inches) and line with paper, butter the paper. Spread the mixture evenly on the paper and bake at 300 degrees for 15 minutes and 350 degrees for 10 minutes. Remove immediately. Cover with damp dish towel. Chill; remove towel and sprinkle heavily with cocoa. Turn over into sheet wax paper. Remove bottom paper. Spread with whip cream. Roll up like a jelly roll. Mend cracks with finger.
