Chess Cake Squares

Ingredients:

1 package yellow cake mix
4 large eggs
16 ounces confectioners sugar
1 teaspoon vanilla
1/4 pound butter or margarine -- melted
8 ounces cream cheese -- softened
 

Preparation / Directions:

Combine cake mix, butter and 1 egg. Press mixture into a 9 x 13-inch pan. Mix cream cheese (lowfat works fine), 3 eggs and sugar (reserving 1/2 cup for topping). Add vanilla and beat well. Pour over crust and bake at 350øF for 45-55 minutes. You can tell if cake is ready by moving rack. If cake is done, it will "shake" in the middle. Top will fall as it cools Sift remaining confectioner's sugar over cake while it is still hot. Cool and cut into square
