Blueberry Sugar Cakes

1/2 Cup Margarine
1 Cup sugar
1/2 teaspoon salt
3 large eggs
2 Cup flour
2 teaspoon baking powder
1 Cup milk
3/4 Cup blueberries

Preparation / Directions:

Oven 400F. Put margarine, sugar and salt into large bowl. Work with wooden spoon till blended. Stir in eggs. Sift flour and baking powder; add to mix. Add milk gradually. Beat for 60 strokes until dough is smooth and shiny. Carefully fold in blueberries (is usually use canned, for frozen or fresh work). spoon into well-greeased muffin pans. Bake 15-20 min or until pick comes out clean. makes 12 reg. size, or 6 texas size with a little left over for freezer. tip: on occasion, when i use texas size muffin pans, i have a little batter left. i put the batter in the freezer, and when i have enough for 6 muffins (usually 2 choc. banana, 2 mandarin orange, 2 blueberry) i bake and have an assortment.
