Banana Nut Spice Cake

Ingredients:


2 1/3 Cups All-Purpose Flour

1 2/3 Cups Sugar

1 1/4 Teaspoons Baking Powder

1 1/4 Teaspoons Baking Soda

1 Teaspoon Salt

1/2 Teaspoon Cinnamon

1/4 Teaspoon Cloves

1/4 Teaspoon Nutmeg

2/3 Cup Shortening

1 1/4 Cups Mashed Ripe Bananas

2/3 Cup Buttermilk

1 Teaspoon Vanilla

2 large eggs

1/3 Cup Chopped Walnuts
 

Preparation / Directions:


Sift flour, sugar, baking powder, soda, salt, cinnamon, cloves, and nutmeg into bowl. Make a well and add shortening, banana, and 1/3 cup buttermilk. Attach bowl and flat beater. Turn to stir speed and mix 30 seconds. Stop and scrape bowl. Turn to speed 4 and beat 1 minute. Add remaining buttermilk, vanilla, and eggs. Turn to speed 2 and beat 30 seconds. Stop and scrape bowl. Turn to speed 4 and beat 1 minute. Reduce to stir speed and quickly add nuts, mixing just until blended. Pour batter into two greased and floured 9-inch cake pans. Bake at 350F for 35 to 40 minutes. Cool in pans 10 minutes, then remove and cool on wire racks. Frost with buttercream frosting.
